Question Cyl Head Question

On the intake side of the heads there are 4 larger square holes for Intake, But what is the small square holes for? There is 3, one on each end , and one in the middle And why does the middle one get carbon up?

The end holes are coolant passages, & the center holes are for heat under the carb(from exhaust passages)....
