Pardon the ignorance, what does NOS stand for?

I am new to the board, and I keep seeing all these NOS parts, that are pretty expensive. Exactly what does it stand for, and what is it?

They seem to be an OE part? I dont know I am just speculating.

New Old Stock; which translate to "it may be 35 or 40 years old, but it's never been used."

you have to watch out for some NOS parts, there is a reason it sat on the shelf for years
