Factory gauges

I connected factory temp gauge. Mechanical gauge shows 195 and I know it's right because cooling fans come on at 190. Does factory temp gauge read right? Also my oil pressure gauge reads over half at idle, at 3000 rpm past h and at 6000 it's off a scale. Bad oil pressure gauge?

Your temp gauge I don't know but my oil presser gauge is like that to but it doesn't go past high like that it will only go to high.

My temp gauge reads a little less than that, but it went higher the one time my coolant was low. My oil pressure gauge does the same as yours. I don't have a tach, but it goes up a lot at higher speeds.

Your guages are as close to right as factory guages get. My bb idles at the 3/4 mark and goes past "h" when running down road. 327 in 68 idles just below half mark in park at first hash mark in gear and goes to about middle or just above driving down road. Oil pressure is in 15 lb increments so you are running approx. 45# of pressure. temp guage will most likely stay there until you change out thermostat. 180 will put it at first mark if that is what you are after. Long and short your guages are good.
