What size air tank.
I bought 2 444c viair compressors. They are the 200 psi compressors. Should I run two 5 gallon tanks or one 8 gallon tank?

Which ever is easiest to mount/fit in the space you have available.

The size of the bags and how much you'll "play" with it will be the determining factor. IMO, you'd be fine with 1 5 gallon tank this way the tank fills up faster.
I have 1 comp filling a 5 gallon tank right now, and I can lift my ride from full drop to full lift once. After that, I need to wait for the tank to fill back up before I can lift the front back up if I drop it. This is with 2600 Dominator bags and 1/2" line. The bad part is it takes 6-8 minutes for the tank to fill back up, so having 2 comps will take less time.

I'm raising the bed floor 12 inches, so I have plenty of room. The fill rate for one 444c compressor 0-200psi in a 5 gallon tank is 5 min 30 seconds. I think if I have the 8.5 gallon tank both compressors could fill it in about 4 to 5 minutes.

Well, this is my 1st bagged ride so to me the 6-8 mins feels like FOREVER!!! Maybe it's not really that long, but it sure does feel like it. Based on that, I wouldn't run the dual 5's since it would take the 5m30s to fill it since it's pretty much 1 comp for each tank. If you don't think that's too long, then having more air on tap is better...it's just a compromise.
