Interesting....
I'm gonna play devil's advocate and suggest that you're not going to see any real (worthwhile) improvement in fuel economy. Your vehicle weight isn't going to change (decrease) more than 100-lbs, meaning you'll have less torque to get that mass moving. That means you're gonna get into the engine more to accomplish the same feat, compared to what you have. I'd love to have more engine than I have, but what I have (350) is adequate for what I do. My '96 GMC has a 4.3/4L60E. I get around 17MPG on average. I recall my late brother-in-law complaining that his 250 6-cyl got between 8 and 10MPG. It may be worthwhile to consider a 4.3....just for the sake of the idea. I know it wouldn't be original, but it may be worthwhile. Still, there's no replacement for displacement.

I'm gonna second that first statement that Ray made. I had a 292 in a '67 C10 I had eons ago. Swapped it for a 350 and probably gained 2 to 3mpg. More cubes and more cylinders makes more power... takes less work for the engine to get the truck moving. But it wasn't a drastic change.
Using an old truck as a DD has it's pitfalls... MPG is one of them. Regardless of the engine you use. Gary
