I have a 68 Chevy swb fleet side and was wondering how hard would it be to install aftermarket temp and oil pressure gauge in the factory location.. The PO just screwed them to the bottom of the dash and is prefer them in the stock location ... Is it as simple as just cutting out the old 1's and replacing with the aftermarket? Thanks

Do you have this cluster?

Or this one?

If it's the second one then it's easy to go to aftermarket. You just find the right size gauges and replace the factory ones and use the sending units for the aftermarket gauges.
I suspect you have the first one and if so then you can either get a seven gauge cluster and re-wire it or you can make the holes in the three gauge and wire up the aftermarket gauges. The electrical forum is the best place to go for this type of information.
