What was the stock carb on a 66 C10 250cid?

I would like to run dual single barrels on the stock 250 with long headers. Any suggestions on what intake manifold and which carbs to run, linkage and so on?

An Offenhauser is your best choice for street use, easiest to run a small 4bbl, but they make triple 1 bbl, and I think dual 1 bbl setups. As mentioned, see Tom Landgons Stovebolt for info, as well as Inliners.org Langdons has a great split cast iron header type manifold, and Clifford Research has shorty and long tube headers.
