will this temp sensor unit fit on 6.0L cast #317 cylinder heads?

no it won't. It's actually 12x1.5mm thread, autometer and others make adapters to go from 12x1.5 to 1/8 NPT for most temp sensors.

I've got a '68. Is there a sending unit that would fit and also work with my stock temp gauge?

you can buy an adapter to use the one you posted for about $12 through summit or whoever. thats probably your best option.
