Tire question.

I have an 03 short bed sport side z71 with a 6" superlift. I currently have 315/75/16 wild country tires on a 10" rim with an offset. Not sure how much but they stick outside of the truck. They are wore down and rub a little at full lock.

I have found another set same size but different brand tires. What I am wondering is if I go back to an 8" rim how much difference would that make. I assume I will lose some width which is fine but might gain height? Previous owner busted the rear lower inner front fender liner with current setup. I am wanting to tuck the tires back underneath the truck and not run flares.
