V is for the assembly plant = Towanda
02 is the month of manufature = February
21 is the day of the month = 21st

FYstamp RPO CID appl VIN HP BBLS Body/Comments
1975 CUB 350 4 spd trans. J L48 165 4 Vette
1977 CUB 350 LM1 L 170 4 B

You might want to look at the engine number on the rear of the block on the ledge behind the passenger head to determine what year of mfg.
There are also some casting clocks in various locations that will enable you to determine the year.
To be certain you will need to get all the codes and combine them to be more accurate.
CUB Suffix points to two vehicles
The 75 Vette block is 165 hp and the 77 full size car was 170hp

Here is a link:
There is two pages check them both, some great reading regarding block numbers.
http://www.mortec.com/location.htm
Without pulling the engine it will be kind of rough, you might have to wait until a better time. You already have a pretty good idea of what you have, a lot of stuff like 2 or 4 bolt mains is hard to confirm without having it apart.
You can check the head casting numbers with the valve covers off.
The main block casting number is in a place that is hard to see with the engine installed and it is in a place that typcally get covered with dirt and grease so not only will it be tough to read but even tougher to clean so you can read the numbers.
The main one will be in either location 2 or sometimes location 3
