Don't miss out on one resource you may have on your side in the fight. If you have personal property tax assessed in your state (I don't know Texas well enough) then you have a State government determination of the value of the truck. Since they make money based on the value, well, I just seriously doubt they'd undervalue it. Then the insurance company will have to sling mud at the state government in order to dispute the value of the truck--something I doubt would sway a court.
