Well, Thanks everyone for your input. I ended up going with a Semi-Gloss Powdercoat.
I have to keep reminding myself that I am just building a driver, not a show truck. I will take this to Parking Lot cruise-ins or Cars & Coffee days. But that will be the extent of this build. But it will likely see Spring/Summer/Fall road-trips. Here it is...

On a 4x4 I would go with hot dip galvanized, would never have to worry about it in your.lifetime.
