Based on the model number it was just a cab/chassis- an upfitter would put on a dump bed or tanker on the back.
CE56803= C = conventional cab (S for school bus chassis, T for tilt cab) E = V8 5= C50 series 68= 108" cab to axle (this would be '18' if it was a Chevy) 03= cab except full air brakes

Sure.
The model code is not "nameplate" specific; ie C10703 or K30943 doesn't tell the operator what brand vehicle it is. RPO Z88 is the "nameplate conversion" option that specifies that everybody needs to put GMC emblems on the truck. Similarly, there is a "Chevrolet nameplate conversion" option (I wanna say X88) and, in later years, a Cadillac RPO (aka Z75). All these trucks were run down the same line. K

Ok, so if I understood that right, both Chevy and GMC were options since both brands were identified as one truck line. It was more like a selection than an option. You HAD TO select one or the other. There was no going without it like with an option. Like paint color, you get choices but paint is not an option, it's a selection

You could think of it that way, but they were called "options" (ie, RPOs) nonetheless.
In some cases if you didn't choose there was a default option. For example, if you didn't choose a color then you got the tan exterior picked for you. Maybe powertrain is a better example. There was a base engine, a base transmission, and a base rear axle. If you didn't choose anything then you got the base powertrain combination, but each of those was still defined by an RPO. Additionally - everything had to balance out when the Engineering Specifications group ran their "cross balance" report to make sure all the combinations were covered. So for every option there had to be a contrasting "negative option" to balance it out, enabling Specs to run their computer generated report and ensure there was a part number created to cover all the proliferation of option combinations. I recall seeing that one could buy a vehicle in primer. That was in '71. Not sure why someone would do that, since it would be really difficult to get everything painted after the vehicle was assembled.
